Air Fried Balushahi

Festivals are a time for indulgence and air fried Balushahi offers a guilt-free treat that satisfies the sweet tooth.
Ingredients:
- 2 cups All-purpose flour (Maida)
- 1/4 tsp Baking powder
- 1/4 tsp Salt
- 1/2 cup Ghee
- 1/4 cup Water
- 1 tsp Saffron strands
- 2 tbsp Hot water
- 1 cup Sugar
- 1/2 cup Water
- A few drops of Lemon juice
Directions:
- In a mixing bowl, add 2 cups of all-purpose flour (Maida), 1/4 tsp of baking powder, 1/4 tsp of salt, 1/2 cup of ghee, and 1/4 cup of water.
- Knead these ingredients into soft dough, cover the dough and allow it to rest for 15 minutes.
- Preheat your air fryer to 190°C for 15 minutes, after 15 minutes knead the dough again to smooth out any layers.
- Apply some ghee to your palms and shape the dough into small, crease-less balls.
- Using the end of a pan, make a small indentation or hole in the middle of each ball.
- Line the basket of the air fryer with baking paper and place the prepared balls in it, grease the balushahi with a bit of ghee.
- Air fry them at 190°C for 15 minutes, turning them after 7 minutes to cook both sides evenly, while the balushahi is air frying, prepare the sugar syrup.
- In a small bowl, mix saffron strands with 2 tbsp of hot water and allow them to rest for 15 minutes.
- In a saucepan, combine 1 cup of sugar and 1/2 cup of water. Over low heat, allow the sugar to dissolve.
- When the syrup starts to bubble and the sugar melts completely, add the saffron water and cook over high heat for about 5 minutes.
- Add a few drops of lemon juice, mix well, and turn off the flame. Keep the saffron sugar syrup aside.
- Once the air-fried balushahi is ready, dip them into the saffron sugar syrup and allow them to absorb the syrup for 15-20 minutes.
- Garnish the balushahi with chopped pistachios and your delicious Air Fried Balushahi is now ready to enjoy!
