Air Fried Gujiya

Diwali is a time for family, love, and sharing, and Gujiya is the perfect sweet treat to share and savour with loved ones.
Ingredients:
- 1 cup Plain Flour
- 2 tbsp Ghee (Clarified Butter)
- 1/4 cup Milk
- Water as needed
- 1 cup Semolina (Suji or Rava)
- 1/2 cup Desiccated Coconut
- 1 cup Powdered Sugar
- 8 tbsp Melted Ghee (Clarified Butter)
- 1/2 cup Powdered Dried Fruits (like almonds, cashews, pistachios)
- 2-3 tbsp Chopped Raisins
- 1 tsp Fresh Cardamom Powder
Directions:
- In a mixing bowl, combine 1 cup of plain flour, 2 tbsp of ghee, and 1/4 cup of milk.
- Knead the mixture into smooth dough. If needed, add water in small amounts to achieve the right consistency. The dough should be firm yet pliable.
- Cover the dough and let it rest for about 30 minutes.
- In a separate bowl, mix together the following ingredients 1 cup semolina, 1/2 cup desiccated coconut, 1 cup powdered sugar, 8 tbsp melted ghee, 1/2 cup powdered dried fruits (e.g., almonds, cashews, pistachios), 2-3 tbsp chopped raisins, 1 tsp fresh cardamom powder for the filling.
- Preheat the air fryer to 180°C for 5 Minutes.
- Take a small portion of the dough and roll it out into a thin disc (similar to a tortilla or roti).
- Place a spoonful of the filling on one-half of the rolled-out dough.
- Fold the other half over the filling, creating a semi-circular shape. Press the edges to seal the gujiya.
- Apply a small amount of ghee on the sealed gujiya.
- Place the prepared gujiya in the air fryer basket, ensuring they are not too crowded.
- Bake the gujiyas at 180°C for 10 minutes.
- After the first 10 minutes, reapply ghee to the gujiyas and bake for an additional 6 minutes.
- Once done, remove the air-fried gujiyas and let them cool slightly.
