Banana Coffee Muffins

Discover pure bliss with the heavenly combination of bananas and coffee in muffin form.

Ingredients:

  • 25g Salted Butter
  • 30g Powdered Sugar
  • 10g Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 Ripe Mashed Banana
  • 1/2 tsp Coffee + 1 tbsp Hot Water
  • 50g All-Purpose Flour
  • 1/4 cup Wheat Flour
  • 1/2 tsp Baking Powder
  • 1/8 tsp Baking Soda
  • Milk (as required to smoothen the batter)
  • 80g Choco Chips

Directions:

  1. In a mixing bowl, cream together Salted Butter, Powdered Sugar, and Brown Sugar until smooth and creamy.
  2. Add Vanilla Extract, Ripe Mashed Banana, and the Coffee + Hot Water mixture (coffee dissolved in hot water). Mix well.
  3. In a separate bowl, combine All-Purpose Flour, Wheat Flour, Baking Powder, and Baking Soda.
  4. Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
  5. Add Milk as needed to smoothen the batter and achieve a muffin batter consistency.
  6. Gently fold in Choco Chips into the batter.
  7. Fill each muffin cup with the batter, filling about 2/3 full.
  8. Preheat your air fryer at 200°C for 5 Minutes, place the muffin tray in the preheated air fryer.
  9. Bake the muffins at 200°C for about 10 minutes.
  10. Once the muffins are cooked, carefully remove them from the air fryer and let them cool on a wire rack.
  11. Enjoy the delicious Banana Coffee Muffins as a delightful treat!
