Garlic Parmesan Chicken Skewers

When the sizzle of chicken meets the richness of parmesan and the warmth of garlic, you know you're in for a treat.

Ingredients:

  • 500g Chicken thighs, cut into equal size chunks
  • Salt, to taste (about 1/2 tsp)
  • 1/2 tsp Black pepper powder
  • 1 tsp Hot Chilli powder
  • 1/2 tsp Smoked Paprika Powder
  • 1/2 tsp Kashmiri Chilli Powder
  • 1 tsp Mixed Italian Seasoning Powder
  • 2-3 Green chillies, finely chopped
  • 1 tbsp Garlic paste
  • 2 tbsp Finely Chopped Fresh Parsley
  • 3 tbsp Freshly grated parmesan cheese
  • 2 tbsp Olive oil
  • 3 tbsp Softened butter
  • Pinch of Salt
  • 1 tsp Garlic paste
  • 2 tbsp Grated parmesan
  • 2 tbsp Finely chopped fresh parsley
  • 1 tsp Chilli flakes
  • Wedge of lemon, for serving

Directions:

  1. In a mixing bowl, combine the chicken chunks with all the marination ingredients: salt, black pepper powder, hot chilli powder, smoked paprika powder, Kashmiri chilli powder, mixed Italian seasoning powder, chopped green chillies, garlic paste, chopped fresh parsley, freshly grated parmesan cheese, and olive oil.
  2. Mix well to coat the chicken evenly. Cover and marinate for at least 1 hour, or up to overnight in the refrigerator.
  3. When ready to cook, preheat the Nutricook Air fryer by selecting the "Roast" option and setting the timer to 14 minutes. Allow the air fryer to preheat for 4-5 minutes.
  4. Thread the marinated chicken chunks onto skewers.
  5. Once the air fryer is preheated, place the chicken skewers in the basket of the air fryer. Cook for 7 minutes, then flip the skewers over and cook for another 7 minutes.
  6. While the chicken is cooking, prepare the basting butter. In a small bowl, combine softened butter, a pinch of salt, garlic paste, grated parmesan, chopped fresh parsley, and chilli flakes. Mix until well combined.
  7. Once the chicken skewers are cooked and golden brown, remove them from the air fryer.
  8. Brush the basting butter mixture over the cooked chicken skewers.
  9. Squeeze a wedge of lemon over the skewers for an extra burst of flavour.
  10. Serve the garlic parmesan chicken skewers with your favourite side dishes and enjoy.
