Kachori

Festivals are a time of togetherness, and Kachori is the perfect snack to share and savor with loved ones.

Ingredients:

  • 1 cup all-purpose flour (maida)
  • 1/2 tsp ajwain (carom seeds)
  • 1/2 cup bhujia sev
  • 1/2 tsp coriander seeds
  • 1/2 tsp cumin seeds (jeera)
  • 1/2 tsp fennel seeds
  • 1/2 tsp sugar
  • 1/2 tsp sesame seeds
  • 1/2 tsp amchur powder (dry mango powder)
  • 1/2 tsp red chilli powder
  • Chopped dry fruits (optional)
  • Ghee
  • Water
  • Salt, to taste

Directions:

  1. In a mixing bowl, combine 1 cup of all-purpose flour (Maida) and 1/2 tsp of ajwain (carom seeds).
  2. Add ghee (about 2-3 tablespoons) to the flour mixture and rub it in until the mixture resembles breadcrumbs.
  3. Season the mixture with salt, to taste.
  4. Gradually add water while kneading to form a smooth and firm dough. Cover the dough and let it rest for about 20-30 minutes.
  5. In a separate bowl, combine 1/2 cup of bhujia sev with the following dry ingredients: coriander seeds, cumin seeds, fennel seeds, sugar, sesame seeds, amchur powder, red chilli powder, and salt. You can also add chopped dry fruits if desired.
  6. Mix these ingredients well to create your dry mixture.
  7. Take a portion of the prepared dough and roll it into a small circle (about 3-4 inches in diameter).
  8. Place a spoonful of the dry mixture in the center of the dough circle.
  9. Carefully fold the dough over the mixture, sealing the edges by applying water and pressing them together. This will create a stuffed, semicircular kachori.
  10. Preheat your Air fryer to 200°C for 5 Minutes.
  11. Place the prepared kachoris on a baking tray lined with parchment paper or a greased baking sheet.
  12. Bake the kachoris in the Air fryer for about 20 minutes.
  13. Once done, remove them from the oven and let them cool slightly.
  14. Your delicious Dry Kachoris are ready to be enjoyed as a savory snack or accompaniment. Serve them with chutney or enjoy them on their own.
