Linzer Cookies: A delicate dance of buttery, nutty goodness and fruity jam that enchants your taste buds.
Ingredients:
- 180g All-purpose Flour
- 100g Butter
- 50g Icing Sugar
- 2-3 tbsp Milk
- Your favourite jam (for sandwiching)
Directions:
- In a mixing bowl, whisk together the butter and icing sugar until the mixture becomes light and creamy.
- Add in the all-purpose flour and milk to the mixture. Combine everything to form dough. You can adjust the amount of milk as needed to achieve the right consistency.
- Place the dough between two sheets of parchment paper. Roll it out to your desired thickness. The thickness will determine the final texture of your cookies, so you can make them as thick or thin as you prefer.
- Refrigerate the rolled-out dough for about 1 hour, or until it becomes firm. This makes it easier to cut out the cookies.
- Preheat your Air fryer to 180°C for 5 Minutes.
- Use cookie cutters to cut out your desired shapes from the dough. You'll want to cut half of the cookies with a smaller shape in the center, creating a "window" in the top cookie.
- Place the cookies on a baking sheet or in the Air fryer basket, making sure to leave some space between them.
- Bake or air fry the cookies at 180°C for about 8-10 minutes, the edges are slightly golden. Cooking times may vary depending on your Air fryer, so keep an eye on them to prevent overcooking.
- Allow the cookies to cool completely.
- To assemble the Linzer cookies, spread a layer of your favourite jam on the bottom cookie (the one without the window). Place a top cookie with a "window" on top of the jam.
- Dust the top of the cookies with icing sugar for a lovely finish.
- Store the Linzer Cookies in an airtight container, placing parchment paper between layers to prevent sticking.
