Ingredients:
- 200g paneer (Indian cottage cheese), crumbled
- 1/4 cup malai (fresh cream)
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped capsicum (bell pepper)
- 1/4 cup grated carrot
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tbsp. chopped coriander leaves
- 1 tbsp. oil
- 4-6 whole wheat or all-purpose flour (Maida) tortillas or rotis
- Olive oil or cooking spray (for brushing)
Directions:
- In a mixing bowl, combine the crumbled paneer and malai (fresh cream). Mix well to form a smooth mixture.
- Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn translucent.
- Add chopped capsicum and grated carrot to the pan. Stir-fry for a few minutes until the vegetables are slightly tender.
- Sprinkle turmeric powder, red chilli powder, garam masala, and salt over the vegetables. Mix well to coat the vegetables with the spices.
- Add the paneer-malai mixture to the pan and mix everything together. Cook for a few minutes until the paneer is heated through and well combined with the vegetables and spices.
- Stir in the chopped coriander leaves and cook for an additional minute. Remove the pan from heat and let the filling mixture cool down slightly. Take a tortilla or roti and place a portion of the paneer filling in the centre.
- Roll it tightly, tucking in the sides, to form a roll. Preheat your air fryer to 180°C for 5 minutes. Brush the rolled paneer rolls with olive oil or lightly coat them with cooking spray.
- Place the rolls in the air fryer basket, making sure they are not overcrowded.
- Air fry the paneer rolls at 180°C for about 5 minutes, or until they turn golden brown and crispy.
- Flip the rolls halfway through the cooking time to ensure even browning. Once cooked, remove the paneer rolls from the air fryer and let them cool slightly before serving.
- Serve the air fried malai paneer rolls as a delicious and healthier snack or as a part of a meal.
