Masala Kaju

Festivals are a time of abundance, and Masala Kaju is the perfect treat to symbolize prosperity and flavor.

Ingredients:

  • 2 cups Maida (All-purpose flour)
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 2 tbsp Ghee (clarified butter)
  • 1 tbsp Black salt
  • 1/2 tbsp Regular salt
  • 1.5 tbsp Chilli powder
  • 2 tbsp Amchur (dry mango) powder
  • 1 tsp Bhuna zeera (roasted cumin) powder
  • 1 tsp Ghee (clarified butter)
  • Salt, as per taste

Directions:

  1. In a mixing bowl, combine 2 cups of Maida (All-purpose flour), salt (as per taste), 1/2 tsp of baking powder, and 1/2 tsp of baking soda.
  2. Add 2 tbsp of ghee (clarified butter) to the dry ingredients and lightly mix them together.
  3. Gradually add water to the mixture and knead it into a smooth dough. Cover the dough and let it rest for about 20 minutes.
  4. In a separate bowl, prepare the masala mixture by combining the following ingredients: black salt, regular salt, chilli powder, amchur (dry mango) powder, and bhuna zeera (roasted cumin) powder.
  5. Mix these spices together thoroughly to create the masala mix.
  6. After the dough has rested for 20 minutes, take a portion of the dough and roll it out. Cut it into half-moon or cashew-like shapes using a bottle cap or cookie cutter.
  7. Preheat your air fryer to 170°C for a 10 minutes.
  8. Place the shaped dough bites into the air fryer basket, ensuring they are not overcrowded.
  9. Air fry the dough bites at 170°C for about 15 minutes.
  10. Once the dough bites are done, remove them from the air fryer and place them in a bowl.
  11. Add 1 tsp of ghee (clarified butter) to the bowl and toss the bites in it to coat them.
  12. Sprinkle the prepared masala mixture over the dough bites and shake or toss the bowl well to evenly coat the bites with the masala.
  13. Your delicious Masala Kaju is ready to be enjoyed as a flavorful snack. Serve and enjoy!
