Masala Vada

From the kitchen to your plate, Masala Vada offers a delightful, aromatic snacking experience that celebrates both tradition and boldness.
Ingredients:
- 1/2 cup Chana Dal (split chickpeas)
- 2 tbsp of soaked Chana Dal (reserved)
- 1-inch piece of ginger
- 2 green chillies
- 1/2 cup chopped cabbage
- 1/2 cup chopped onions
- 2 tbsp Rice Flour
- Salt, to taste
- 1/2 tsp Red Chilli Powder
- 1/2 tsp Garam Masala
- Fresh coriander leaves, chopped
- Oil for brushing
Directions:
- Rinse the Chana Dal under running water until the water runs clear. Then, soak it in enough water for about 3-4 hours.
- After soaking, drain the water and transfer the soaked Chana Dal to a mixer jar.
- Add the ginger and green chillies to the mixer jar.
- Blend the Chana Dal, ginger, and green chillies coarsely. You don't want a completely smooth paste; some texture is good.
- Transfer the coarsely ground Chana Dal mixture to a mixing bowl.
- Add chopped cabbage, chopped onions, reserved 2 tablespoons of soaked Chana Dal, rice flour, salt, red chilli powder, garam masala and fresh coriander leaves to the bowl.
- Mix everything well to form a uniform mixture. If the mixture feels too dry, you can sprinkle a little water to make it easier to shape into vadas.
- Take small portions of the mixture and shape them into round vadas. You can flatten them slightly to give them the typical vada shape.
- Preheat your air fryer to 200°C for 5 minutes.
- Lightly brush or spray the vadas with oil. This will help them get crispy.
- Place the vadas in the air fryer basket in a single layer.
- Air fry at 200°C for about 15 minutes, flip or shake the basket halfway through to ensure even cooking.
- Once the vadas are golden brown and crispy, remove them from the air fryer.
- Serve the Masala Vadas hot with your favourite chutney or sauce.
