Nankhatai

Festivals are about indulgence and Nankhatai is an indulgence that adds a delightful sweetness to our celebrations.
Ingredients:
- 1/2 cup Clarified Butter (Ghee)
- 1/2 cup Powdered Sugar
- 1/2 cup Gram Flour (Besan)
- 1/2 cup Wheat Flour
- 1/4 cup Semolina (Sooji)
- 1/2 tsp Baking Powder
- Pistachios (for garnish)
Directions:
- In a mixing bowl, combine 1/2 cup of clarified butter (ghee) and 1/2 cup of powdered sugar. Mix until it's creamy.
- Add 1/2 cup of gram flour (besan), 1/2 cup of wheat flour, and 1/4 cup of semolina (sooji) to the mixture. Also, add 1/2 tsp of baking powder.
- Knead the ingredients together to form a smooth and firm dough. You can adjust the consistency with a little extra ghee or flour if needed.
- Take small portions of the dough and shape them into round cookies or any desired shape.
- Place the shaped Nankhatai in the air fryer basket. You can garnish them with pistachios.
- Preheat your Air fryer to 175°C for about 10 minutes.
- Air fry the Nankhatai at 175°C (350°F) for about 20 minutes or until they turn golden brown.
- Once the Nankhatai is done, let them cool before enjoying your homemade cookies.
