Potato Boats

Indulge in a satisfying bite of these loaded Potato Boats, where each morsel is a delightful combination of creamy potatoes and a variety of delectable toppings.

Ingredients:

  • Boiled potatoes
  • Mozzarella Cheese or Processed cheese
  • Choice of vegetables (e.g., finely chopped carrot, finely chopped beetroot, finely chopped onion)
  • Salt
  • Oregano or Italian seasoning
  • Chilli flakes
  • Additional mozzarella cheese or any other cheese for topping

Directions:

  1. Take the boiled potatoes and cut them in half lengthwise, creating boat-shaped halves.
  2. Scoop out some of the potato flesh from each half, creating a hollow space to fill with the vegetable and cheese mixture.
  3. In a bowl, combine the finely chopped vegetables (carrot, beetroot, onion), salt, oregano or Italian seasoning, and chilli flakes. Mix well.
  4. Fill each potato boat with the vegetable mixture, pressing it gently to ensure it fills the hollow space.
  5. Grate or slice the mozzarella cheese or processed cheese and place it on top of each filled potato boat.
  6. Sprinkle some additional oregano or Italian seasoning and chilli flakes on top.
  7. Preheat your air fryer at 180°C for 5 minutes.
  8. Place the potato boats in the preheated air fryer and bake at 200°C for 5 minutes.
  9. Once cooked, remove the potato boats from the air fryer and let them cool slightly before serving.
  10. Enjoy the delicious and cheesy potato boats as a quick and tasty snack or appetizer
