Rajasthani Pyaaz Kachori

Rajasthani Pyaaz Kachori: A snack journey that adds a touch of Rajasthan's spice to your snacking routine.

Ingredients:

  • 2-1/2 cups all-purpose flour (Maida)
  • 1/2 tsp Ajwain (carom seeds)
  • 1 tsp coriander seeds
  • 1 tsp kasoori methi (dried fenugreek leaves)
  • 1 tsp fennel seeds
  • 1 tsp cumin seeds
  • A pinch of hing (asafoetida)
  • 3 garlic cloves, finely chopped
  • 3 tbsp Besan (gram flour)
  • 1-1/2 tsp Red chilli powder
  • 1 tsp Amchoor powder (Dry mango powder)
  • 1/2 tsp Black salt
  • 1/2 tsp Garam masala
  • 1 medium onion, chopped
  • 2 green chillies, chopped
  • 2 medium potatoes (boiled, peeled, and mashed)
  • 1/2 tsp Powdered sugar
  • 1 small onion, thinly sliced
  • Oil
  • Salt
  • Water, as required

Directions:

  1. Add coriander seeds, kasoori methi, fennel seeds, and cumin seeds in a pan. Roast them on low heat until fragrant.
  2. Transfer the roasted spices to a mortar and pestle, and grind them coarsely.
  3. Heat oil in a pan, then add the ground spices, hing, and chopped garlic. Cook for a few seconds.
  4. Add besan, red chilli powder, amchur powder, black salt, and garam masala powder. Roast on low heat until the besan is roasted well and fragrant.
  5. Add chopped onions, salt, and green chillies. Cook until the onions are soft.
  6. Add mashed potatoes, sugar, mix well, and cook for another 2-3 minutes on low heat.
  7. Switch off the stove, add sliced onions, coriander, mix, and let it sit for about 10 minutes.
  8. In a large bowl, combine all-purpose flour, ajwain, salt, and oil. Mix well.
  9. Gradually add water and knead a semi-soft dough.
  10. Make small balls from the dough and flatten them slightly to create small discs.
  11. Place a portion of the prepared filling in the center of each disc, then gather the edges to seal and shape them into kachoris.
  12. Brush each kachori with oil.
  13. Preheat your air fryer to 200°C for a 10 Minutes.
  14. Place the kachoris in the air fryer basket, ensuring they are not overcrowded.
  15. Air fry at 200°C for about 20-25 minutes, turning them midway through to ensure even cooking.
  16. Once they are golden brown and crispy, remove them from the air fryer.
  17. Serve the Rajasthani Pyaaz Kachori hot with green chutney and tamarind chutney.
