Spinach Corn Pakoda

Spinach Corn Pakoda: A culinary fusion where vibrant spinach and golden corn come together in a crispy embrace.
Ingredients:
- 1 cup chopped spinach (after squeezing out excess water)
- 1/2 cup besan (gram flour)
- 1 and 1/2 tbsp rice flour
- 1/2 tsp turmeric powder
- 1/2 tsp roasted jeera (cumin) powder
- 1/2 tsp coriander powder
- 1 tsp red chilli powder
- Salt to taste
- 1 medium-sized onion, finely chopped
- 1 or 2 green chillies, chopped
- 2/3 cup steamed or boiled corn
- 1/4 tsp baking soda
- 2 tbsp water
Directions:
- In a mixing bowl, combine chopped spinach, besan, rice flour, turmeric powder, roasted jeera powder, coriander powder, red chilli powder, and salt.
- Add the finely chopped onion, chopped green chillies, and steamed or boiled corn to the mixture. Mix well to combine.
- In a small bowl, mix baking soda with 2 tablespoons of water and add it to the mixture. This helps in making the pakodas fluffy.
- Mix all the ingredients together to form a thick batter. The batter should coat the back of a spoon.
- Preheat your Air fryer at 180°C for a 5 minutes.
- Take small portions of the batter and drop them into the Air fryer basket. Make sure to leave some space between the pakodas for even cooking.
- Air fry the pakodas at 180°C for about 8 minutes. After 8 minutes, flip the pakodas and air fry again at 200°C for an additional 7 minutes.
- Once the pakodas are cooked to perfection, remove them from the Air fryer.
- Serve the Spinach Corn Pakodas hot with your favourite chutney or sauce. Enjoy this crispy and flavourful snack!
