Spinach Corn Pakoda

Spinach Corn Pakoda: A culinary fusion where vibrant spinach and golden corn come together in a crispy embrace.

Ingredients:

  • 1 cup chopped spinach (after squeezing out excess water)
  • 1/2 cup besan (gram flour)
  • 1 and 1/2 tbsp rice flour
  • 1/2 tsp turmeric powder
  • 1/2 tsp roasted jeera (cumin) powder
  • 1/2 tsp coriander powder
  • 1 tsp red chilli powder
  • Salt to taste
  • 1 medium-sized onion, finely chopped
  • 1 or 2 green chillies, chopped
  • 2/3 cup steamed or boiled corn
  • 1/4 tsp baking soda
  • 2 tbsp water

Directions:

  1. In a mixing bowl, combine chopped spinach, besan, rice flour, turmeric powder, roasted jeera powder, coriander powder, red chilli powder, and salt.
  2. Add the finely chopped onion, chopped green chillies, and steamed or boiled corn to the mixture. Mix well to combine.
  3. In a small bowl, mix baking soda with 2 tablespoons of water and add it to the mixture. This helps in making the pakodas fluffy.
  4. Mix all the ingredients together to form a thick batter. The batter should coat the back of a spoon.
  5. Preheat your Air fryer at 180°C for a 5 minutes.
  6. Take small portions of the batter and drop them into the Air fryer basket. Make sure to leave some space between the pakodas for even cooking.
  7. Air fry the pakodas at 180°C for about 8 minutes. After 8 minutes, flip the pakodas and air fry again at 200°C for an additional 7 minutes.
  8. Once the pakodas are cooked to perfection, remove them from the Air fryer.
  9. Serve the Spinach Corn Pakodas hot with your favourite chutney or sauce. Enjoy this crispy and flavourful snack!
