Stuffed Bell Peppers

From the kitchen to your table, Stuffed Bell Peppers offer a culinary experience that combines artistry and flavour.
Ingredients:
- Olive Oil
- 1 tbsp Finely Chopped Garlic
- 1 Chopped Onion
- 1 Sliced Carrot
- 1 cup Tomato Purée
- 1/2 cup Black Beans (or any beans of your choice)
- 1/4 cup Boiled Corn
- Black Pepper
- Oregano
- Herb Seasoning (any of your choice)
- Cumin Powder
- Chilli Flakes
- 1 cup Boiled Brown Rice
- Salt to taste
- Bell Peppers (any colour)
- Mexican Rice (prepared as mentioned above)
- Grated Cheese (as desired)
Directions:
- Heat olive oil in a pan and add finely chopped garlic. Saute for a minute.
- Add chopped onions and sauté until they turn pink.
- Add sliced carrot and cook for a few minutes.
- Pour in tomato purée and cook for a while.
- Add black beans, boiled corn, black pepper, oregano, herb seasoning, cumin powder, and chilli flakes. Cook until the mixture is semi-dry.
- Stir in boiled brown rice and salt. Cook for about 5 minutes to let the spices absorb.
- Halve the bell peppers and remove the seeds and membranes.
- Fill the bell pepper halves with the prepared Mexican rice stuffing.
- Sprinkle grated cheese over the stuffing. You can use as much cheese as you prefer.
- Brush the air fryer basket with some oil to prevent sticking.
- Place the stuffed bell peppers in the air fryer basket, ensuring they are stable and won't tip over.
- Bake at 200°C for 10-12 minutes.
- Once done, remove from the air fryer and serve the stuffed bell peppers hot.
